You know, all things considered, it would probably not be too unreasonable to potentially see a fully grown dragon that wants to pick up some extra coin for his hoard to sign on to a job like that. I mean, they have to earn their money as well, just like everyone else in this world. And if you were just a band of random bandits, would you go and attack a caravan that's being guarded by a dragon? Granted many dragons would find such work beneath them and would rather extort various towns to pay them to not destroy their town.
