For me it was the fact she started to eat the treasure as well as the horns because often having huge hordes of treasure is what dragons are known for. I didn’t even notice the eyes and tongue details till you pointed them out which definitely supports the theory!

If it's true that she is becoming a dragon, then I'm willing to bet this'll become sort of a pop culture combo situation. If she becomes like a hybrid then she'll be like the hungry and very well-fed dragon from the Dungeons and Dragons movie. But she'll also horde piles of wealth (or in this case piles of food that she'll snack on whenever she whims) like Smaug from The Hobbit that she'll rest upon while guarding and keeping a watchful eye to make sure no one takes even a single crumb from it 'lest she starve to death and waste away'.
Maybe she might also pull a sorta-King Kong move as well and she'll greedily keep her sheep servant / girlfriend all to herself (which may not be much different than normal already as it's pretty clear the sheep servant is like her personal caretaker at this point and is dilligent and by her highness's side most of the time) and guard her (if anything in this case that most likely being from any daring suitors) just like she'd do so with her horde of food and anything else she may deem her precious treasure. The more I think about it, it also kinda sounds like a Bowser-style move with Peach too.
