Dip into this delight from the kitchens of
starallon
For my Father's Birthday I made a few course meal. Here is the appetizer I served first off, which was indeed quite delicious.
In fact it ended up filling up most of us a bit so much the main course wasn't eaten nearly as much of! Not that I'm complaining, it means I just had more leftovers from it for me to enjoy later.
A very easy and very tasty dip here. I used Vidalia onions since they are in season and my favorite onion of all time. If you want a stronger tasting dip go ahead and use white or yellow onions for this. I added a jalapeno to this and it did add a little heat, but it could have easily taken a second one in my opinion.

This is a delicious hot dip that is great to have as an appetizer or serve at parties. It’s also one of the easiest recipes and just makes good use of a food processor and your oven to make.
Make it a day ahead or two even for more flavor and bake it at the time of the party till golden brown and delicious!
Setup:
1 cup Mayonnaise
1 ½ medium sized onions
1 cup cheddar cheese
1 Jalapeno (Optional)
15 buttery crackers.
I love to use Vidalia Onions for this recipe, though if you use sharper onions it works too, for a sharper taste.
Combine Wedges of onion and Jalapeno in a food processor and pulse until well minced. Scrape down bowl and add in the Mayo and cheese. Pulse several times more until the mixture is fairly uniform together.
Pour into an 8 x 8 baking dish.
Place Crackers in a zip-top bag and crush. Pour over dip mixture.
Cover dish with aluminum foil and refrigerate until ready to bake.
Baking:
Pre-heat oven to 400 degrees,
Keep dish covered and bake for fifteen to twenty minutes until mixture is bubbly.
Remove foil and bake again for ten to fifteen minutes until the topping is lightly browned.
Let stand for five minutes and serve with crackers for a hot and tasty dip. It’s also really great cold as well too.
Topping it with crispy fried onions works as a nice topping too!
