
Wanted to try something I saw in a youtube video comment, this video here on making carrot flat bread: https://www.youtube.com/watch?v=AnFv3wH9C4E someone mentioned a lazier version with pancake mix consistence instead of rolling dough so I decided to try it. I used almond flour though which did not work as well as I would have hoped, and a little wheat flour.
Ingredients: (I eyeballed everything)
Half medium bag of sliced carrots
Diced Garlic, about 1 tbs worth
Powdered Ginger
Water
Almond Flour
Wheat Flour
Cumin
Turmeric
Trader Joe's Everday Seasoning
Ghee
Instructions:
Combine carrots, garlic, and powdered ginger in blender, add water and blend until smooth
In a bowl add seasonings to carrot mix and then add flour until it's a thick but pourable consistency
Heat some ghee on a pan to medium-high heat, then plop a couple spoonfulls of the carrot mix per pancake
Cook carrot pancakes on each side for roughly 4 minutes each side
Enjoy!
Thoughts: As always the first pancake was a disaster, that's just pancake law. But the rest came out pretty okay! I think they taste like what someone could describe as "Vegan toasted cheese sandwich" flavor wise, the more cooked parts tasting more cheesy. I enjoyed these but the almond flour didn't behave how I'd hoped it would so I'll have to try a different flour. Suggestions welcome, I can't really use oat flour because I'm pre-diabetic.

Your almond flour issues might be related to the lack of gluten in the almond flour. Unfortunately, wuff's not sure what you'd want to use otherwise.
Interestingly, Chef John of Food Wishes just did a vid for a carrot/apple pancake. He said he got his idea from apple fritters. Those looked tasty too, but wuff's not sure how well they'd fit your diet. He used self-rising flour, and the apples would bring some sugars of their own.
