So here we are, a craving for something from the Maritimes, and I fell upon making this. The humble, damned tasty donair.
and now, how to make it:
First, the meat:
Essentially, this is a spiced heavy meatloaf.
lean ground beef - 1kg
bread crumbs (panko) - 0.5 cup
black pepper - 1 tbsp
onion powder - 4 tsp
paprika - 4 tsp
oregano - 2 tsp
garlic powder - 2 tsp
kosher salt - 1.5 tsp
cayenne powder - 0.25 tsp
Preheat your oven to 350f
Kneed all of the ingredients in a bowl thoroughly until it is very well blended - a good 5 minutes or more.
Form into a loaf-ish shape, then put into a breadpan and press it in firmly to remove all of the air. You want this loaf of meat VERY firm.
Toss (well, place gently) the breadpan into the oven (remember to close the door) and set it for an hour and a half.

Dice some fresh tomato, and some fresh onion (though I had a thought o use some Blitzed Bat ... I just don't have any made). these are your toppings.

Now for the essential part: The sauce
Eagle brand sweetened condensed milk - 300ml (though I am sure any sweetened condensed milk would work)
white vinegar - 1/2 cup
garlic powder - 1tsp
Whisk the ingredients together. Cover in the bowl (or transfer to a bottle) and put it in the fridge.
Take out the loaf of meat, when it finishes cooking. Let it rest for at least 15 minutes. You want the juices to absorb back into the meat.
Once it's cooled down enough, slice it thinly.

The actual sandwich
steam a pita bread (put a wire rack over a pot of boiling water. Put the pita on that. Flip it over after about 10 seconds or so (the bread, not the pot). Remove the bread.
Put a few slices of the meat on the bread. Add your onions and tomatoes. And remember that sauce we made? Yeah. Add some. Then, add a little more.
Fold it up and eat it.
