I would clean those mice, dress them, stuff them with some seasoned breading, and bake them very slowly. Serve with some poached eggs.

I would try to catch them as I don't need them making more mice inside my house as I'm already dealing with rats. (Long story short I had chickens and had gotten some wheat that I used for chicken feed that unfortunately to me at the time it had drew in LOTS of rats and lost count of how many that I've trapped.)
Once I capture them I would try to tame them and make them into pets as they do make good companions.
