I made a bit more progress on the model for Khaos. The mesh itself is mostly finished, maybe I move a vertex or two, but the shape of the character is sufficiently rendered to where I can start mapping the UVs. Since this is going to be for a GameCube styled game, I've opted for a 256x256 texture atlas. The horns were easy enough to map, but the tail is giving me a good deal of frustration. Hopefully by next week or so I'll have enough figured out that I can start rigging an armature to it.
