It was too nice of a day not to smoke some meat.
ingredients:
One bone in pork roast.
Blue berry juice
frozen bag of blue Berrys
frozen bag of mixed vegetable's. (used a bean and carrot mix)
jerk spice blend.
honey rum mix.
Method:
Set pork roast in a large pot and fill with the blue berry juice and let it sit in the fridge over night. Next get your smoker up to 220 degrees. With a few chance of cherry wooded added to the hot charcoal. Set the pork roast in a heavy cast iron Dutch oven and pour a little of the blue berry juice into the pot. (about an inch or so from the bottom of the pot.) Then pour some of the honey rum mixture over the roast and let the pork cook for 7 hours or until the meat falls off the bone. Next take the meat out and cut it up in to large chunks and dump it back in to the duct oven (don't forget to nom some of the meat.) next add the frozen bag of blueberries and the frozen bag of vegetable's as well as the spice mix . Then give every thing a mix (add more juice of need be). Put the cover back on and let it cook until the pork falls apart. You may want to add some salt to taste.
