I guess since Grey is trying to stay calm it's more of a comment to keep his cool when he mentions his own blood.
Just to clarify, Grey has developed senses from loosing his sight. But are his other sense's even better then that because of how he was created.
In some cases, Grey seems so perceptive that you wouldn't have guessed he couldn't actually see. He has a limited sense of touch, heightened smell and hearing...wonder if he can sense energy fields of individual people?

yes, grey's senses are in general more heightened than an average human's. he has excellent senses of smell and hearing.
his sense of touch isn't limited, he can feel everything. but the impulse of pain doesn't come through. so if you gashed his arm with a knife, he'd feel that the skin was split and it was wet from blood and that it might possibly have lost some mobility. but it wouldn't hurt.
and i guess it's a spoiler but yeah, he can sense energy fields. at least for most living things.
