A friend of mine actually found someone who uses taxidermy pieces to use as bases and for ears. Maybe this will help with ears (and/or horns if you are making those). Otherwise I have no clue how to make a fur suit XD. If you are interested let me know and I will note you my friend so you can ask her more. She likes the mask style rather than full fursuit herself.
You got the profile line down for sure :3 the nose is perfect. My only criticism might be that on the bottom right picture, there's a sudden drop from the forehead to the top of the brow. Because of that it looks like a mask or smaller face smacked onto a larger one. It may not be a problem but you may want to try adding more clay in that indented area so its not so drastic. But definitely is a great sculpt :D
I think right now it looks much more like a cat than a sheep. I think the eyes would need to be much farther apart, the snout would have to be longer and the cheeks almost non-existent.
Of course, once ears are put on, it would almost solve the issue, but I presume you want the mask to be as realistic as possible.

The heads been completed actually! But no, I wasnt going for realism, I was trying to match it up to how I draw the character.
