Pi indeed, filling, tasty and a treat from the kitchens of
junkbox
Sweet Hot Potato Pie
3 large sweet potatoes
1/2 cup sugar
1/4 cup honey
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon cayenne pepper, or to taste
(Increase to a full teaspoon if you think Butch didn't use enough dynamite.)
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (12 oz.) Evaporated Milk
2 unbaked 9-inch (4-cup volume) deep-dish pie shells
Bake sweet potatoes until soft. Set aside to cool.
Mix dry ingredients in a small bowl; set aside.
Remove sweet potato skins, mash in large bowl.
Add honey, eggs, and milk to sweet potatoes, stir/mash until mixed.
Add dry ingredients, mix thoroughly. Pour into pie shells.
Bake in preheated 425F oven for 15 minutes.
Reduce temperature to 350F; bake for 40 to 50 minutes or
until a knife inserted near center comes out clean.
Cool on wire rack.
Serve with whipped cream or vanilla ice cream. It'll need something to smooth out the bite!
Garnish: I used waxed paper to make a stencil, and sprinkled cinnamon on the pies before baking to make the "pi".
