The hours-long. deep, honest. and thorough chats with someone. where both learn so much about the other.
Why are those so rare?
It certainly requires a lot of trust. and shared values, and sometimes the ability to keep a level head.
But why are these most rewarding conversations so rare?

Fear, I imagine. So many examples of honesty being scorned that it's become a fear reaction. Look up the Johari Window for a deeper analysis. Often, "the mask" is the biggest part of someone's Johari Window because it allows us to hide potentially problematic aspects of ourselves while displaying what we deem "safe" based on what we know of our perceptions of someone.

Isn't the commonly accepted wisdom that it takes some amount of hours to learn about someone enough to be friends, and that again to be good friends, and again for very close friends etc? It's a lot of hours to commit to get to those conversations, especially when you have to get along with the guy before even making an attempt to reach that level of closeness.
