I'm afraid I don't know any egg recipes as 1) I hate eggs and 2) we don't freeze eggs in my country so I don't anything about using them quicky, but try this.

Quiche/frittata likely the best and fastest, otherwise can make some egg noodles and freeze those. Virtually any sort of baked goods like cake or brownies. Any kind of egg based casserole (pretty much a frittata). Heck you could probably even just make some omelettes or cooked egg rounds and freeze those for quick reheat breakfast options.

Some egg fried rice might fit your needs here. Just remember to reheat it in a skillet (with a little oil) and not a microwave. Lest you get soggy rice.

Egg Bites can be frozen for reheating in a microwave. Wuffy did a series of recipes on them, using Sous Vide or Instant Pot (pressure cooker) techniques. They're VERY tasty!

Here's a version you can make in an oven using a muffin pan. The ingredient list looks very similar to those wuff has made in instant pot and sous vide, so flavors should be very similar even if texture is a bit different. And you can always change the "mix ins" any way you like for the style you prefer. There are other recipes on line for oven-baked versions of these, if you want to look those up.

Also, you can freeze beaten eggs. Whisk them together until completely combined. Add a tiny pinch of salt or sugar -- it helps to keep the yolks from becoming gelatinous.

Can be frozen in an ice tray and transferred to a freezer container or freezer bag.

Thaw overnight in the fridge or in a bowl of cold water. Can be used in scrambled eggs, omelets, frittata, etc., anything where beaten egg is used. Also can be used in baked goods.

Frozen eggs will keep up to a year. They should be used immediately after thawing.

How long does it take to thaw?

Overnight in the refrigerator, an hour or less in a bowl of cool water, depending on the size of the portion being thawed. If they're very small sizes, like those frozen in a small-cube ice tray, you could thaw them on the counter in a hour or so. But don't leave them out too long because you're in the "danger zone" heat-wise at room temp and you want to minimize time for raw foods there.
