I haven't read beyond AVOS nor read the comics yet.
Yes it is a lot, but chunk it up over time and it'll be manageable.
The first four arcs practically weld together if you want a starting suggestion. The others are kind of a second half, with DOTC being an interesting middle child.

The first three or four arcs are good and some of the novellas but the newer arcs are mostly mid.

read every page from the entire series in random order. that way you're getting the ideal average

Definitely would recommend, in release order. I've only read the first four arcs and some of the spinoffs and have no plans to go further than that (aside from DOTC at some point), they tell a nice complete story and I can't imagine what tacking more stuff onto the end of it would really add lol
