so, here is what we have so far...
its a new type of undead that works like a fungi infection with spores that have a specific way of infecting individuals.
this particular little plant that produces the spores was a long forgotten species of flora that dragons were always afraid of due to its unique quantity in a dense forest found off the charts. this flora spore will find its way into a dragons body and begin to crystalize it from the inside out, allowing even the most resilient dragons fall to the floor with just a day. most of the crystallization forms a hard shell in the form of gemstones following the elemental capacity (following the dragon's age and what type of element it wields)
the most common are ice dragons that live fairly close via tundra forests, while it becomes more rare to find them on dragons with electricity or fire. The crystal symbiosis causes the crystals to destroy themselves by exploding the inside of the dragon; at the time the fungus begins to grow and take over nerves to control the now dead dragon.
How can you tell if its this new strain? the dragons grow a plate of whatever mineral matches the element, and will continue to grow out of the skin and hollow areas of the dragon (the eye sockets, nostrils, mouth, and exposed teeth gums) this is what is called crystal metamorphosis and becomes a brand new species of its own featuring a dragon with its own new mindset with one goal; survive.
The flora that now creates these crystal dragons? the name is fungus mycine. this flora's original name has been lost to the overwhelming time jump from their era. these harmless to humans but deadly to dragons plants are now only found in a cavern that hasn't been located to keep the dragon population under wraps to avoid the potential extinction of all dragons, no matter how mighty the dragon.
