Thinking of trying a new diet...

Well I've been spending some time thinking about it, and after hearing from people who've tried (and sometimes failed), I've decided I'm going to try becoming semi-vegetarian.
This won't mean I'll stop eating meat all together. I adore red meat and pork - and pretty much live off the stuff - but I have noticed a lack of vegetables in my diet. I feel like I get enough calcium and protein simply from drinking milk and eating chicken, and I'm not eating nearly as much in general. I'm debating whether or not this is because a mostly "carnivorous" diet is playing around with my digestive system and making me want to eat less... either way, I've been eating nothing much at all except for the occasional "meat-binge", which only gives me a temporary energy boost. It doesn't feel particularly healthy, and meat is starting to lose it's taste after eating it so often.
So if I do decide to do this over the upcoming holidays, does anyone have recipes or tips to ensure I don't throw my diet completely out of whack? I've been doing chicken with rice a lot, and trying to have salad when I can, but I'm getting a little sick of the same kinds of foods all the time... because y'know, too much meat's just going to make me fat lol.
So eh... I'll still have chicken, fish and bacon. Just no steaks for a while... meep.
