I might have a couple from various RPs. One is a story where the Cutie Mark Crusaders are "foalsat" by Fluttershy for misbehaving in their own unique ways. Each one ends up with a different punishment to keep things varied.

Another one is where Daring Do tries to find the Fountain of Youth, but instead finds a lonely foal alicorn that's all too happy to have a new "baby" to play with. The twist in this one is that everything is al natural; the diapers are absorbent leaves, the pacifiers flower bulbs (with varying effects) and so on and so forth.

I can also offer an RP where Shining Armor and Cadance stumble across a secret nursery in the catacombs beneath Canterlot, where they become trapped by a magical recreation of Celestia whose protocol for trespassers is to baby them, whether they like it or not.

If you don't mind retreading ground (Leyen made a few pictures for this one), I also have a story where Celestia decides it's time for her (now very) little sister to take an enforced vacation. Royal Canterlot Pouting ensues.

There's a (frankly, piece of shit) one on FimFiction that was recently posted about Luna wanting to be regressed--mind and body-- to a foal, but my RP for it is around a year old now. Heck, my version of Luna was using ye olde English before Luna Eclipsed even aired, just ask Hooligans or Knails.
