Considering renn faire and wild west have been repeated before as furry con themes.
Wild west themes multiple times, in fact.
FC did "A knight's tale" about 10 years ago, and that was about as close as any furry con has gotten to actual fantasy, swords and sorcery, etc.

As for High Fantasy.. mmm. I wonder if we could pull of Tolkien :3
(Tolkien is almost considered "literature" now...)
It can also include such things as Game of thrones, or any of the many B grade sword and sandal movies I could name.
I mention this because I keep hearing complaints that themes are being re-used too often, and folks want more variety.
Folks want more variety, I'll throw out some ideas.
