Streaming tips? (Mac)

Anyone else out there streaming from a Mac and have any pointers?
My problem is this: I have excellent audio (stereo at 40kbps runs fine, no skips, clear) but my video always seems to start out good and then turn to crap as the stream progresses. I have been shooting for a 10fps framerate of a decent desktop size for clarity (1280x960 or so) and it appears to start out well and then drop down to 1 fps or less. Even if I drop the size to something sad like 700x400, the framerate still seems to suck.
Using Adobe Flash Media Live Encoder, on Picarto, and CamTwist for the desktop capture.
My upstream tests consistently at 1.8 Mbps, and I'm not maxing it with FMLE (maybe 850kbps limited) so I figure 50% of my bandwidth is a good cushion and should be able to cope with what I am doing to it.
Dunno what else to do, unless it's all Picarto's fault, which it could very well be. Anyhow, anyone willing to share their perfect stream settings, I'd like to see what y'all are doing. Thanks!

well you could stop streaming from a starbucks :V
The downside of course is that they don't let you run games beyond 15 minutes at a time for breaks since their web software can't take a constant punishment so they say. They came into a friend's stream making light of this.
