Grilled asparagus with lemon...
...anything hummus related (I've even done a baba-hummus, that is, a mix of baba ganoush and hummus, that was orgasmic)
I really need to do that roasted brussel sprout recipe you have on your page, its brilliant...
And make vegetable pakoras, with raita and some spicy chutney :3
It's my favorite side to take to parties now...People can't believe it's Brussel sprouts.

Serves 6-8
6-8 Yukon Gold Potatoes, peeled and sliced into 4 pieces each.
1-2 cans chickpeas
2 cans pureed tomatoes
1/5 of a stick of butter
2 Jalapeno chili peppers, chopped and seeded.
1 half-onion, chopped
1 head of cilantro, for garnish
1 tablespoon ginger paste
2 teaspoons salt
2 teaspoons curry powder
1 teaspoon cayenne pepper
1. Boil your potatoes, either by stove or by microwave, until soft. Drain the chickpeas.
2. In a large pot, melt the butter on medium heat, and when hot enough, saute the onions for 2 minutes. Add the salt, cayenne, and curry powder, and stir them together for 1 minute.
3. Add the peppers, chickpeas, and potatoes, and cook for 30 seconds to 1 minute (your choice.) Add the tomato puree and ginger paste. Stir thoroughly for best results.
4. Turn the heat down to medium low, and simmer for 25 minutes, stirring periodically. If it looks to be low on moisture, add a little less than 1/4 cup of water.
5. Garnish with cilantro and serve with hot rice and naan bread.
