"Heyo!
Odd request. Do you know of any (or know of anyone who would) good, tried and tested wing sauce recipes that are made from scratch? All the recipes I find online are just "take this premade hot sauce, add butter and a few extra spices." and that feels like cheating. :c :c
If you can point me in the right direction, or maaaaybe possibly post a journal asking for feedback (I dunno if that's something members can ask for. No worries if that's too much!) that'd be amazing. :D

Small Update: Seems that Jeeves is looking for more of a "Hot Wings" recipe, but lets keep this going since there's more to life than just hot wings :P

Who else?
take
1/3 cup of honey
1/3 cup sriracha
2 tbs of seasoned rice vinegar
a few drops of seasame oil
whisk and add to freshly fried or baked wings in a bowl and stir/flip! you must apply while hot or else the glaze wont stick correctly. garnish with seasame seeds for restaurant quality wings you'll friends wont believe you made :)
2 cloves garlic
1/4 onion
1/2 cup water.
chop and cook till tender. [15 min or so]
blend till smooth. add
4 tbls vinegar
salt to taste.
BBQ wings while coating in sauce.
favorite by far.

Sauce for Chicken (double but put between two bowls)
the juice of two lemons (can use lime, orange or blood orange for variation)
the zest of one lemon
1-2 tablespoons of honey
2+ cloves of crushed garlic
thyme fronds
pepper and salt to taste
corn starch - second bowl only
mix the lot together (except thyme)and put about a kilo of wings in to marinate in to one of the bowls. place some thyme fronds in but reserve some for cooking
Put the wings into a fry pan with the marinade, liberally lay thyme fronds over the top, place a sheet of grease proof paper/baking paper over the lot
cook your wings until done
while cooking take the 2nd batch of sauce and blend in about two teaspoons of corn starch
When the chicken is done take them out or put to one side of the pan to rest.
Now add in the 2nd bowl of sauce to the pan and let it thicken while stirring, put the chicken back in or serve the sauce over the chicken.
