About half your elves are working for the Parks Department or the US Fish and Wildlife Service (probably in the national parks), while the other half are expensive, high-maintenance, well-paid cosmetic mages specializing in full-body resculpts.

Dwarves working mostly in the military and construction for anything requiring either fortifications and/or extremes of strength, and in the mining industry advising both on the overall level and the mine engineer level.

Dragonkind (those friendly to society) handling a mix of high-speed airborne courier and long-range, low-altitude military recon carrying specialized photo-rigs. Can fly NOE (Nap Of the Earth) and thus get superlative recon info.

Werewolves and other werecreatures working in SAR (Search And Rescue to track and find injured or wounded people, doubling over into a similar military role as well as operating as special forces for deep behind the lines operations

Gnomes employed in the experimental tech fields, plus doing test work on said same for real-world testing

Devils in the Corporate world, working in HR and Legal departments (specifically contract law)

Water elementals in both lifeguard operations as well as firefighting, the former position bolstered by mermaids/mermen. Mer-folk on the whole assisting in oceanic/blue water SAR, especially submarine SAR.
