Same Leafbite time, same Leafbite place, I welcome Leafbiters old and new to another round of Leafbite Challenge!
After last year I think I have settled on what I like to keep doing for Leafbiting every year. Based on the year before, I will be offering chibi drawings of your characters with my recipes or your own. The more people join, the more days we all bite leaves, the more activity we have going on here and the more recipes you submit for each other, the more times I will draw the raffle.
So basically, if you want to be featured in a recipe I post for Leafbite:

Wtf is Leafbiting? October 4th is World Animal Day, something that doesn't seem to be a very well known fact around the world, oh well. As my gesture towards all the tasty animals I love to eat so much, including fish and other seafood, I refrain from eating any meat for 2 months (until December 4th, my birthday). It helps me appreciate eating meats even more so, I think anyway.
Can I join? Yes! Please do~ You don't have to do it for the sake of the tasty animals we love to eat, it's simply a challenge you can set yourself.
How do I leafbite then? Starting the 4th of October, we all stop eating meat for any period of time up to 2 months. It sounds simple enough, but if you're not used to a vegetarian diet, you need make sure you properly substitute all the animal foodstuffs you cut out. Think of beans, soy products, eggs, nuts, mushrooms, cheese and other dairy, readily available meat substitutes are usually found in most supermarkets. It's a good idea to think ahead of time and plan the meals for your days/weeks/months of leafbiting, find vegetarian recipes from around the webz and ask your fellow leafbiters or vegetarians you know for suggestions.
It is IMPORTANT to
- make sure you eat properly, get all the nutrition you need. I can't say it enough, just leaving meat off of your plate isn't healthy. Talk to your roommates or parents if they're the ones usually cooking for you to see if they want to help you or even cook for you through this period.
- have fun! Don't suffer through meat withdrawal or malnourishment just for the sake of joining. If you don't know your limits, just go for a few days or maybe a week at the most to be sure you can handle it.
I'm already a vegetarian That's great! I hope you appreciate what we're trying to do here then, even though you can't really join.
I don't want to Leafbite That's fine. The reason I do this is BECAUSE I like eating meat after all, so I see where you're coming from. If you still want to do something for World Animal Day, you could spend the day spoiling your pets rotten, help out at your local animal shelter or give them a donation of pet foods or monies you can afford to give to charity, anything to show your love and support for the animals living with us on this planet :3
I think Leafbiting is stupid because *insert reasons* Honestly I've heard them all by now. Even so, if you really object to any of this or need to say something unproductive, send me a note instead. I want to keep this journal an encouraging environment for those that do want to join. I have had to block people before that didn't seem to understand this.
How do I join? Leave a comment on this journal, stating you want to join. Tell me for how many days you'd like to participate, anywhere from 1 day to 2 months (61 days). If you want, you can link to a vegetarian recipe you like and I'll put it next to your name on this journal :3 If your period overlaps with special holidays (like Thanksgiving or maybe family birthdays) and you don't want to put out your family by having them put out vegetarian meals for you, you can ask for a day of exempt. These days won't count towards your total, but at least you won't have to sit around people eating meat while you chew away on a salad.

That's an interesting recipe, I have never toasted chick peas before. I don't have a proper oven tray either, so i have to look into something for it, but I'd like to try it.
Also will plop down a few recipes here when I've the time!
-garlic
-large onion (dice it!)
-1 or 2 bell pepper (different colors)(dice them)
-few carrots (dice them)
-few celery stalks (dice them)
-1 jalapeno (seed and fine dice)
3 cups veggie broth
¼ can tomato paste
1 can tomatoes and chiles
1 can kidney beans (drain/rinse)
1 can black beans (drain/rinse)
1 can pinto beans (drain/rinse)
-spices (oregano, cumin, chili powder, etc…)
Directions
Heat some oil in pot over medium. Add onion, bell pepper, carrots, celery, garlic. Cook for like 5 minutes and stir occasionally. Add halapeno and cook another minute. Add in spices and cook another minute or two.
Pour in the broth, tomato-chiles/tomato paste. Stir and bring to boil. Simmer for like 30 minutes, add in beans and stir and then simmer another 20-30 minutes.
Can top with cheese and sour cream and a butt ton of crackers!
Is that a veggie chili recipe then?
Well it starts on the 4th, lets put me down till the end of the 11th (So yea including the 11th) that sounds good
And with more time to prep, I have more time to plan foods n whatnot cuz my family absolutely goes out of their way to refuse this challenge and eat as MUCH meat as they can and try to force it on me. They just DO NOT get it x.x
Plus I love that this falls right after my birthday (On the 1st) so I have time to work off all that partying XD

I don't know if that's the recipe exactly but it's basically that stuff. Might have to eyeball proportions a bit. Also after doing it once I definitely think toasting up some more bread crumbs with some butter/oil and putting them on top of the eggplant and under the tomato/cheese would be a great way to get more of a "crust" on it. x3
I cook veggies on the regular, though I usually do it as a sort of side. It’ll be interesting to try to cook it as a main dish.
For a quick and easy meat free treat that’s hard to beat, go for this if you happen to have the materials nearby.
For cheesey beany burrito minis, you’ll need:
-Tortilla(s) (1 for each burrito you wish to make.)
-Beans, either boiled pinto and mashed to goo or refried’ll do, black beans if you wanna be a bit more healthy about it.
-Rice, white or Brown rice is fine, or whatever rice you like, i just usually use one or the other.
-Cheese, block or grates is fine, go Mozzarella for less oil, but colby jack or cheddar work fine.
- (optionals) slice of onion(dice ‘em up), jalopenos, perppercinis, lettuce(shreaded), and sour cream. These are to give a bit more texture and oomph to the burrito, if you are fine with just beans and cheese it works too, but these’ll give it some punch.
-(optional cont.) you can spice up your rice with minced garlic or garlic powder if you have it available, don’t go too over board, I would say one teaspoon of either would be fine per buttito you make, but feel free to add a little more or less to your own preference, I find that the garlic helps give the burrito that satisfying taste that you would normally get from meat.
The way i usually craft the burrito is: tortilla, bean base, seasoned rice, cheese, (optionals), little more cheese, then wrap. Perfect for satisfying hunger real quick and on a budget.

-Cauliflower & quinoa powerbowel from BJ's Brewhouse
(Roasted barboca cauliflower, peruvian quinoa & brown rice blend, black beans, corn & fire roasted red pepper succotash, cucumbers, pickled red onions, pico de gallo, feta cheese, their house made guac (some spice with jalapeno), greek yogurt crema, & celantro)
-And korean fried cauliflower, paired with a salad, from Cheesecake Factory
(crispy cauliflower tossed with sweet & spicy sauce, toasted sesame seeds & green onion, with a lime on the side)
Im sure there is a recipe out there somewhere, but I couldnt find it. So if made at home, more or less have to go with what you feel

at least you have a recipe for the korean fried cauliflower if you wanna try it =3
2 cans of brown beans, any brand or flavour without pork.
1 can of red kidney beans.
1 can of white kidney beans.
1 white onion diced.
4 celery stalks diced.
3 tomatoes diced.
2 green peppers diced.
3 cloves garlic minced.
Chili powder. Add as much to taste as you like. I like a lot, so... could be equivalent to 5 - 6 tbsp.
1 tbsp cumin.
1 tbsp salt.
2 tsp cayenne pepper.
Your favourite hot sauce to kick it up.
2 cups water.
Start things off with a tbsp of butter or oil in the pot, saute the onions, peppers and garlic till the onions turn translucent. Add remaining ingredients, cooking over medium heat and stir frequently. Cook time: 30 - 40 minutes, to render down the fluids and get the flavours to mix.
I might try adding okra to this batch. 1 jalapeno pepper diced is optional.
I'd like to join for a week, I'd there's still time to sign up.
I already have my weekly meals set up, too. Most of them are home-grown this year.
