I need help/advice with an enormous world-building projec...

Sooo, where to start? I have a rather colossal world in which my characters like Mirabilis and Messeriah inhabit. It spans a timescale of several millennia, involves a ridiculous number of story arcs, histories, cultures, species, worlds etc, and here is the kicker... So, I need to explain something about myself first: I have a *good* memory. I can recall most of the plots and characters that I have come up with when daydreaming over the last 15 years. However, most of this is entirely in my head. I have written almost none of it down, and I'm honestly not sure why, but I know it would be time-intensive.
Where do I need help and advice? Well, after my exam next week I'll be free as a bird for the summer, and I would like to take some time to share some of this universe on here. But where to begin? The art that already exists of these characters is a sort of sneak peek into this world, and I have more of that on the way. However, I'm certain that no better medium exists to share these kinds of stories than writing (though, I may be biased), so I'd like to do some writing.
Writing everything up into one coherent story is basically a no-go, as it would make the Wheel of Time look paltry by comparison (and there is a reason why those kinds of projects, like GoT and post-LoTR Middle Earth stories, for example, stall and don't often become complete). Also, some of the stories borrow too heavily from other stories.
My ideas, so far, for how to share this universe are:
- An encyclopedia that I will continually add to, possibly built around a timeline of events, that will explain the background of the characters, hierarchy of dragons, worlds, technologies, etc.
- Short stories or flash fiction that show snippets in the lives of characters in this world, like Mirabilis, in a sort of anthology.
- Perhaps a website for the above?
- More art!
Is there any particular insight into this world that you would like to see, for example, the ideas above, or other ideas? What other media could I share this world with? And where on earth do I start? Is any of this even remotely appealing? :P
