Hatchet's options:
1. Kill Jack outright in a blind rage
2. Be reluctantly impressed that Jack has found a backbone at last; after all, Sandy attacked him, not the other way around
3. Get into a bloodbath fight with Phoenix when the latter tries to defend Jack
