Hi there! Here's one of the recipes I've made fairly recently that I'm more proud of in regards to how it turned out. Orange Ginger Sesame Chicken Stir Fry, over white rice!
Estimated Prep Time: ~20 Minutes
Marinating time: Minimum 15 minutes
Cook Time: Estimated 10-20 minutes
Ingredient List:
3/4 Cup some sort of 100% orange juice, recommend no pulp
2-3 Tbsp Soy Sauce, recommend low sodium
2 tsp Ground Ginger
1 tsp Garlic Powder
1/8th tsp Ground Red pepper (Or a bit more red pepper flakes - just be careful)
1 lb chicken breast, cut into thin strips (Alternatively, use 1lb flank steak)
1 - 1.5 tbsp oil; Sesame oil goes great but I like Grapeseed and Olive oils
~1 lb of chopped/whole vegetables (Frozen vegetables work fine! Just thaw them)
1 tbsp Honey
1-1.5 tsp cornstarch
1 tsp toasted Sesame seeds
Optional: 1 tbsp or so Diced Garlic
Preparation:
Combine Orange Juice, Soy Sauce, Ginger, Garlic Powder and Red Pepper into a large bowl. I used a pancake pourer (basically a large measuring cup).
Reserve 1/2 of the above marinade.
Use the remaining marinade to coat the chicken well, and refrigerate for a minimum of 15 minutes - the longer the better, within reason.
Cooking:
Heat the oil in a LARGE skillet on MEDIUM heat.
Remove the chicken from the marinade, and add to the skillet.
STIR-FRY until chicken is no longer pinkish in the middle -- hard for me to give a good estimate since I just do it for fun. :)
Remove chicken from the skillet and set it aside.
Add vegetables, STIR-FRY for about 3-5 minutes.
WHISK reserved marinade with honey and cornstarch, until it becomes smooth
Add the whisked marinade into the skillet. Stir CONSTANTLY.
Boil for 1 minute, return Chicken to the skillet and cook until fully heated and cooked.
Serve over hot rice; I recommend brown rice always!
Lightly garnish with toasted Sesame Seeds. Don't know how to toast them? It's simple!
Toasted Sesame Seeds:
Heat a small skillet on medium heat.
Add sesame seeds.
Cook and stir for about two minutes, or until they become fragrant and and golden brown.
POUR IMMEDIATELY from the heated skillet to avoid over-cooking.
Contains a fairly decent chunk of vitamins and minerals, not too bad on fat. You can reduce sodium by using less soy sauce as desired. Cholesterol levels aren't that bad either, by my estimate.
As always, make sure you look at what's going into something you cook! Decide if it'll be a good choice for you to eat before you begin buying and preparing.
If you wish to use the diced garlic, I added ~half during the frying of the chicken, and the remaining portion during the frying of the vegetables.
