Albrect Druhrer in the 15th century did them with full backgrounds - and did not do immortal glorious perfect people and animals, you can actually see the dirt on the animals. you need to remember if you want to make a wood cut block you need to use hardwood. and you go in the direction of the wood in different places as you carve.
