I'm a huge fan of weres. Not just werewolves, but like werehyenas, werelions, werebears, etc.

Sphinxes would be my second choice!

A kirin or qilin. They are the oriental version of a unicorn although they can have more than one horn. I'm biased though since I have a character of this species.

I would also like to see a phoenix.
